Cajun Pasta Alfredo with Fire Station Dalmatian Sausage

Ingredients

Fire Station Dalmatian Sausage, sliced into rounds

1 pound

penne pasta

1 pound

bell pepper, julienned

1

yellow onion, sliced

½

Cajun seasoning

1 tablespoon

heavy cream

8-10 oz

parmesan cheese

6 oz


Method of prep:


Boil pasta to “al dente”, drain and set aside. Heat a large skillet over medium high heat. Once the pan is hot, add sausage and brown. Remove sausage and set aside. Add peppers and onions to the sauté pan and cook until vegetable as caramelized and brown. Dab excess oil left in the pan with a paper towel. Add as much or as little Cajun seasoning as desired. Next, add heavy cream and bring to a boil, reduce heat immediately to low and reduce cream by one quarter. Add pasta back to the pan and heat thoroughly. Add parmesan cheese and melt while stirring the pasta. Add sausage to the pasta mixture and serve! Garnish with parsley.
