Cast Iron Orange Dream Cake

Serves 8

Prep time 20 minutes, bake time 1 hour


For the Cake

2 1/2 cups

All Purpose Flour

3 Tablespoons

Chia Seeds

2 teaspoons

Baking Powder

1/2 teaspoon

Baking Soda

1/2 tsp

Salt

2 sticks or 8 oz

Unsalted butter, softened

1 1/2 cups

Light Brown sugar, packed

1/4 cup

Sour Cream

1/2 cup

Orange juice

Zest of 2 Oranges


2 teaspoons

Vanilla extract

1

Orange thinly sliced





For the bottom of the pan


1/2 cup

Light brown sugar, packed

2 Tablespoons

Butter, unsalted



For the icing drizzle, optional


2 cups

Powdered sugar, sifted

3-4 Tablespoons

Orange Juice

1 teaspoon

Vanilla Extract

Method of prep:

Preheat oven to 350 degrees F

In a small bowl, mix chia seeds with 1 cup of water. Set aside for 3-4 minutes.

Sift together flour, salt, baking soda, and baking powder.  Set aside.  In a stand mixer with a paddle attachment or in a bowl with a hand mixer, place soften butter and beat for 1 minute.  Scrape the bowl down using a spatula and beat for another minute.  Next, add the brown sugar and whip together until light and fluffy.  Make sure to scrape down the sides of the bowl halfway through.  Add the hydrated chia seeds, orange juice, sour cream, vanilla extract, and orange zest.  Mix until smooth.  Now stir the flour mixture into the wet batter in, making sure not to over mix.  It’s ok to have a little bit of lumps. 

Prepare the skillet by preheating over a medium heat.  Add 2 Tablespoons of butter and 1/2 cup of brown sugar. Allow to melt, stirring occasionally.  Next, spread the melted brown sugar evenly on the bottom of the pan.  Arrange 6 thin orange slices in the bottom of the skillet.  Evenly pour the cake batter into the pan, making sure to spread the batter into the edges.  Immediately slide the skillet into the oven on the center rack and bake for 1 hour Aor until the center of the cake springs back to the touch or a wooden skewer inserted into the middle of the cake is clean. 

Remove the cake from the oven and allow to cool for 10 minutes.  With extreme bravery, loosen the edges of the cake with a butter knife and flip the cake out onto a cooling rack or cake plate. 


In a small bowl, whisk sifted powdered sugar, orange juice, and vanilla extract until smooth.  Drizzle this glaze over the cake.  Slice and serve!
