Cast Iron Skillet Apple Cobbler

Apple Cobbler




Serves 6


Self-rising flour 1 cup

Milk 1 cup

Sugar 1 cup, divided in half

Water ¾ cup

Apple, sliced 1

Cinnamon 1 teaspoon

Butter extract 1 teaspoon

Nutmeg pinch

Butter ½ stick

Salt pinch

Method of Prep:

Pre-heat oven to 350 degrees. Melt the butter in a 10 inch cast iron skillet. In a small saucepan, add water, 1 cup of sugar, and apple slices. Bring to a boil and simmer 5 minutes.

Mix together self-rising flour and sugar in a mixing bowl. Slowly whisk in milk to prevent lumps. Add cinnamon, nutmeg, salt, and butter extract to the batter. Pour the batter into the skillet over the melted butter, do not stir. Spoon apple syrup over the batter, do not stir. Bake for 20 minutes. Serve warm with ice cream!

I made this recipe with blackberries and raspberries using about 2 cups of fruit. Also, split the sugar between white and brown, adding a more rustic flavor. Gave the batter a splash of real vanilla and substituted almond milk for dairy. Served with whipped coconut cream and it was yummy. Even better the next day!
