Keto Friendly Chicken Parmesan, Creamy Vodka Sauce over Zoodles

Ingredients (serves 4)

About 10-12 grams carbohydrate per serving

chicken cutlets

4 (about 4 oz each)

fresh mozzarella

4 slices

crushed tomato

1 cup

tomato paste

2 Tablespoons

garlic, minced

2 cloves

heavy cream

4 oz

small yellow onion, diced

chopped basil

2 Tablespoons

corn starch or arrowroot

2 Tablespoons

baking powder

1 teaspoon

crushed pork rinds (suggested brand Porq)

2 cups

eggs, whisked

Pro Seasoning All Purpose

2 teaspoons

Pro Seasoning Everything But the Salt

1 teaspoon

avocado oil

1 cup

olive oil

2 Tablespoons


Method of prep:


Preheat a medium sized skillet over medium heat.  Add 2 Tablespoon avocado oil or olive oil to the pan.  Once the oil shimmers, add onions and cook until translucent.  Next, add garlic and sauté for 30 seconds.  Add the tomato paste and crushed tomato and bring to a gentle boil while stirring.  Then add the heavy cream and bring the sauce to a gentle boil.  Lower the heat to medium low to low and simmer for about 10 minutes.  Season with Pro Seasoning All Purpose to taste, and add half of the basil.  Use the other half of the basil for garnish before serving. 

For the cutlets, season cutlets with Pro Seasoning All Purpose and Everything but the Salt.  Dredge cutlets in corn starch or arrow root mixed with baking powder and shake as much of the excess off as possible (this will ensure we are cutting as much carbs as possible).  Next, add the eggs to a bowl and dredge the cutlets.  Finally, add the pork rind powder to another bowl, and dredge the chicken until covered. 

Preheat a skillet over medium high heat.  Add avocado oil to the pan and allow to heat.  Once the oil is slightly smoking, add the cutlets to the pan and reduce to medium.  Brown the chicken on both sides and cook to 165 degrees internal temperature.  Remove chicken from pan.  Top with warm sauce and mozzarella cheese.  Brown the top in an air fryer or broiler if desired. Garnish with chopped basil. Serve over zucchini noodles!



Zucchini Noodles with Creamy Tomato Vodka Sauce Ingredients (serves 4)

About 6 grams of carbs per zucchini About 9 carbs per serving for sauce

2-3 zucchini, spiral sliced

Method of prep:


In a large sauté pan heat sauce over medium heat.  Add zucchini noodles to pan and heat thoroughly.  Top with shredded parmesan cheese if desired.
