Duck Egg Pasta

Makes 2 pounds of pasta
Ingredients:
00 "double zero" Flour | 2 cups |
Duck Egg Yolks | 5 |
Duck Egg, whole | 1 |
Salt | 1 teaspoon |
Olive Oil, extra virgin | 1 Tablespoon |

Method of prep:
Mix all ingredients together until dough can be kneaded. Duck eggs have a higher fat content than chicken eggs. If the dough seems crumbly, you can add a teaspoon of water at a time until it is able to be kneaded. Knead dough for 2 minutes and let rest for 20 minutes before rolling out.
