Fall Harvest Salad Components
Serves 4
Field greens salad mix 6 cups
Red onion, this sliced and marinated in vinaigrette 1/2 cup
Goat cheese, crumbled 1/2 cup
Pomegranate seeds 1/4 cup
Candied pecans 1/4 cup
Vinaigrette, recipe below 1/4 cup
Toss all ingredients together and serve!
Vinaigrette recipe:
Pomegranate vinegar ¼ cup
Olive oil ¾ cup
Honey 3 tablespoons
Dijon Mustard 3 tablespoons
Parsley, chopped 2 tablespoons
Salt and pepper TT
Granulated garlic 1 tsp
Method of prep:
Mix vinegar, mustard, honey, parsley and garlic in a mixing bowl with a whisk. Slowly drizzle oil into the mixture in a thin, steady stream until all oil is mixed in. Season to taste.
