Garlic and Butter Grilled Oysters
Ingredients:
Oysters, fresh shucked 2 dozen
Garlic, minced 6 each
Butter, unsalted 1 stick
Parmesan, grated ¼ cup
Parsley, chopped ¼ cup
Lemon juice ½ lemon
Pepper ¼ teaspoon
Method of prep:
Scrub oysters with a brush under cold water. While shucking oysters, hold on a sheet tray with ice and salt. Preheat grill on highest setting. Melt butter, garlic, parsley, lemon juice, and pepper together in the microwave in a microwave safe bowl. Place oysters on the grill. Spoon butter mixture over oysters, filling the shell. If the grill begins to flare up, that is ok, we want a little of that “flame kissed” flavor. Add Parmesan cheese to each oyster. Grill for 2 minutes. Remove from the grill and serve with toasted flat bread or crackers. Garnish with parsley.
