Ingredients:
Sweet potatoes, sliced into 1/2 inch rounds
Grape seed oil, 2 Tablespoons
Honey 1/2 cup
Red wine vinegar 1 cup
Pro Seasoning 1 Tablespoon
Dried rosemary 1 teaspoon
Method of prep:
Preheat grill to 400 degrees
To make the gastrique, place the vinegar in a sauce pot and cook over medium heat until it reduces by half, about 5 minutes. Add the honey and continue cooking until the mixture has reduced to a syrupy consistency, about 5 minutes, set aside.
Toss potato rounds, grape seed oil, and Pro Seasoning in a large bowl. Grill potato rounds for 10-15 minutes on each side. Baste with gastrique when potatoes are tender enough to slide a fork through. Remove sweet potatoes from grill, sprinkle with rosemary and drizzle with gastrique.
