Irish Colcannon

Colcannon

Serves 4-6

Potatoes, peeled and diced 5 large

Bacon, diced ½ pound

Cabbage, cut into ribbons 5 cups

Milk 1 cup

Irish cheddar, grated finely 1 cup

Butter ½ stick

Salt TT

Pepper TT


Method of prep:

Boil Potatoes until fork tender, set aside. Pre-heat a large sauté pan over medium high heat. Add the bacon to the pan and cook until brown and cooked through. Remove bacon and set aside. Add cabbage to the pan can cook over medium high heat until cabbage is soft and caramelized. Set aside

In a large bowl, add warm potatoes, butter, and milk. Mash into potatoes to desired texture (smooth, lumpy, the world is your oyster!). Fold in cabbage, bacon, and cheese. Season to taste. Place colcannon mixture into a casserole dish and bake at 350 degrees until piping hot, about 20 minutes.
