Lobster Mac and Cheese

Lobster mac and cheese

Serves 6

Ingredients:

Unsalted butter ½ stick

All Purpose Flour ½ cup

Whole Milk 1 quart

Asiago cheese, grated 2 cups

Cheddar cheese, grated 1 cup

Monterey Jack cheese, grated 1 cup

Lobster tail, poached and diced ½ pound

1 pound boiled and cooled shell pasta

Salt, white and black pepper TT

Granulated garlic 1 tablespoon

Fresh thyme, chopped 1 teaspoon

Method of prep:

In a medium sauce pan melt butter over medium heat. Be careful not to brown the butter. Once it's melted add the flour and stir into a paste. Cook the paste for 1 minute and add milk. Use a rubber spatula to scrape the bottom of the pan to make sure it's all incorporated. Use a whisk to stir the sauce over medium to high heat. Cook until the sauce is the consistency of yogurt. In a large mixing bowl, mix hot sauce with all of the cheese, pasta and lobster. Mix thoroughly and add salt and pepper to taste plus garlic and thyme. Transfer to a casserole dish or cast iron pan. Bake at 350 until brown on the top and the Mac n cheese is bubbly. Top with extra cheese before baking for extra golden brown results.
