Ingredients (Serves 4)
Moroccan Couscous | 1 ½ cups |
Red onion, small dice | 1/2 cup |
Dried Apricot, medium dice | 1/2 cup |
Red Bell Pepper, medium dice | 1 |
Garlic clove, minced | 1 |
Parsley, finely chopped | 3 Tbspn |
Paprika | 1 Tbspn |
Ground Cumin | 1 tsp |
Pro Seasoning All Purpose | tsp |
Extra Virgin Olive Oil | ¼ cup |
Vegetable stock | 1 ½ cups |
Method of prep:
Heat a medium sized pot over medium high heat. Add olive oil to the pot and once it shimmers, add the bell pepper, onion, and garlic, and stir. Reduce heat to medium and sweat veggies for about 1 minute. Next, add all of the dry seasonings and about half of the parsley. Stir the mixture and cook for another minute. Add the stock and apricots and bring to a boil. Once the liquid is boiling, stir in the couscous and turn the heat off. Cover the pot with a lid and remove from heat. Let stand about 10 minutes. Remove the lid and fluff with a fork. Garnish with remaining parsley and serve!
