Tiramisu











Tiramisu Serves 6

Ingredients:

Cold brew coffee 2 cups

Sugar 1 cup

Kahlua ¼ cup or mini bottle

Egg yolks 6 each

Mascarpone, room temperature 8 oz

Whipping cream 2 cups

Lady fingers 2 boxes

Powdered sugar ½ cup

Cocoa powder ½ cup

Vanilla extract 1 teaspoon


Method of prep:

In a medium sized glass or metal mixing bowl, whisk together egg yolks and sugar until the mixture lightens in color slightly. Place mixing bowl over a double boiler and whisk the egg mixture, occasionally removing egg mixture from the heat so the eggs don’t scramble. Be sure to scrape the sides during this process. Cook the mixture to 160 degrees. Let cool completely. Mix room temperature mascarpone with the egg mixture thoroughly.

In a stand mixer with a whip attachment or with a hand mixer, whip cream and vanilla until firm peaks form in a mixing bowl. Fold egg/mascarpone mixture together with whipped cream.

Place coffee and Kahlua in a clean bowl. Dip each lady finger in coffee and line the bottom of a 9 x 13 casserole dish with the dipped lady fingers, forming a layer. Next, add mascarpone filling in a 1 inch layer. Repeat the lady finger/coffee step and create another layer of soaked lady fingers. Add another layer of mascarpone filling and smooth the top of the tiramisu. Mix powdered sugar and cocoa powder and dust the top of the Tiramisu. Chill for 3 hour and enjoy!
